There are few things more comforting than this Vanilla Rice Pudding, made with warm milk, cinnamon, vanilla and Minute Rice®.
Step 1
Beat egg with wire whisk in a medium saucepan. Gradually add the milk, beating until well blended.
Step 2
Add dry pudding mix and stir for 2 minutes, or until well blended.
Step 3
Stir in rice and raisins.
Step 4
Bring to a boil over medium heat, stirring constantly.
Step 5
Remove from heat immediately after pudding comes to a boil.
Step 6
Cool for 5 minutes, stirring occasionally.
Step 7
Pour evenly into dessert dishes or serving bowl.
Step 8
Sprinkle evenly with cinnamon and nutmeg. Serve warm. Or, cover and refrigerate until ready to serve.

If you want to make this recipe dairy-free or vegan, try replacing the milk with your favourite plant-based alternatives like coconut milk or almond milk. You can also use a vegan instant pudding mix and cut out the egg.

First, ensure you soak the rice for at least 20 minutes before cooking. If you are having bad luck with runny rice pudding, it can be thickened by adding more cooked rice, boiling it down to reduce the liquid, or adding a thickener such as flour. Keep in mind that as it cools, it will thicken.
If your rice pudding is hard, make sure that you are cooking the rice properly before adding it to the pudding mixture. If it is overcooked, it will be hard and crunchy; if it is undercooked, it will be mushy.
