5 Minute Microwave Fried Rice
Step 1
Heat rice according to package directions and set aside.
Step 2
Coat a medium, microwave-safe bowl with non-stick cooking spray. Add the egg and sesame oil, if using, to the bowl and scramble lightly. Microwave egg mixture on HIGH for 30 seconds.
Step 3
Remove egg from microwave and stir to break up the cooked egg. Add the rice, peas and carrots, soy sauce, ginger and green onion.
Step 4
Microwave on HIGH for another 30 seconds. Stir and serve.
