20 Minute Leftover Turkey Soup
Step 1
Prepare rice according to package directions.
Step 2
Melt butter in a large saucepan set over medium heat.
Step 3
Sauté carrots, celery, onions, garlic, sage, salt and pepper for 3 to 5 minutes, or until softened.
Step 4
Stir in broth and bay leaves and bring to a boil. Stir in turkey and gravy. Reduce heat to medium-low and simmer for 10 to 15 minutes, or until veggies are tender.
Step 5
Stir in rice and peas. Cook for 3 to 5 minutes, or until rice is heated through and peas are cooked.
Step 6
Remove bay leaves. Serve soup with baguette slices, if using.
