15 Minute Lamb Kabobs with Fried Rice
Step 1
Preheat oven to 425°F (220°C). Mix together lamb, garlic, cumin, paprika, and salt; shape mixture into 16 meatballs. Thread onto metal skewers or soaked bamboo skewers. Place on parchment paper– or foil–lined baking sheet; bake for 12 to 15 minutes or until cooked through and no longer pink inside.
Step 2
Meanwhile, prepare rice according to package directions; toss with tomatoes and half of the mint.
Step 3
Serve rice with kabobs. Garnish with remaining mint.
