
16 Minute Green Goddess Rice Salad
Step 1
Heat rice according to package directions. Let cool completely.
Step 2
In blender, purée garlic, yogurt, basil, chives, cilantro, mayonnaise, lemon zest, lemon juice, oil, dill, parsley, salt and pepper until smooth; set aside.
Step 3
In a medium bowl, toss together rice, avocados, apple, romaine, spinach, and green goddess yogurt dressing until well coated.
Step 4
Serve with lemon wedge.
