20 Minute Easy Porcupine Meatballs
If you have been craving meatballs then you are in luck. These mouth-watering Porcupine Meatballs made with Minute Rice® will win your family over.
Step 1
While melting butter in a 3-quart saucepan over medium-high heat, add onions and cook while, stirring, until tender.
Step 2
In a large bowl combine onions, beef, rice, egg, seasoning and ¼ cup water; mix gently by hand until well blended.
Step 3
Shape into medium-sized meatballs.
Step 4
Pour pasta sauce and remaining water into the same 3-quart saucepan. Stir and bring to a boil. Add meatballs and return to a boil.
Step 5
Reduce heat to low and cover. Simmer for 15 minutes, or until meatballs are cooked through.
Other meats to use are ground turkey or chicken.
Serve meatballs and sauce over Minute Rice® and top with grated Parmesan cheese.

Meatballs are not as difficult to make as they may seem. All you need to do is mix the ingredients together, make a meatball shape and cook them in the pan until they are ready and voila! Dinner is served.
Porcupine meatballs are a little different since we switch out breadcrumbs for our Minute Rice®. Aside from this small change, they remain pretty traditional.
The first step is to sauté some onions to add flavour to your mixture. When ready, add them to a combination of ground beef, rice, egg and seasonings. Ultimately, we add about a quarter of a cup of water to ensure that the meatballs bind nicely while keeping their moisture.
There are various terms for how eggs should be added when cooking or baking. For slightly beaten, you will usually beat the egg with a fork or a whisk just until the egg whites and yolks are blended. The goal for slightly beaten eggs is to ensure that the white and yolk do not remain separate.
Once you have your eggs all sorted and your mixture is ready, form the meatballs and heat some tomato sauce in a large skillet. Then, add the meatballs to the sauce, boil, and relax! After simmering, the meatballs will be ready to eat.
