25 Minute Lime-Ginger Shrimp Fried Rice
Step 1
Prepare rice according to package directions. Allow to cool completely.
Step 2
Meanwhile, heat oil in a wok or large skillet set over medium-high heat. Add shrimp, Bok choy, mango, ginger and salt and sauté for 3-5 minutes, or until shrimp start to curl and Bok choy starts to wilt.
Step 3
Stir in rice. Cook for 2-3 minutes, or until well coated. Stir in soy sauce and lime juice and cook for 2-3 minutes more, until rice is heated through.
If you don’t have any Bok choy on hand, try making this recipe with small broccoli florets or trimmed green beans, instead.
