25 Minute Beef & Broccoli Stir-Fry
Step 1
Prepare rice according to package directions.
Step 2
In a medium pot, bring 6 cups of water to a boil. Add broccoli to water for 3 minutes. Drain and reserve.
Step 3
Heat oil in a large wok or skillet over high heat. Add beef and cook until browned on all sides, about 3 minutes. Add mushrooms and sauté for 5 minutes. Add pimientos and cooked broccoli and reduce heat to low.
Step 4
Combine 1/3 cup water, lemon juice, soy sauce, cornstarch and ginger in a small bowl. Add mixture to wok and increase heat to medium. Stir-fry meat and vegetables until sauce begins to boil. Continue to cook for 1 more minute. Remove from heat and serve over rice.
