20 Minute Southwest Breakfast Bowl
Step 1
Prepare rice according to package directions.
Step 2
In a large skillet heat olive oil over medium heat. Add black beans, corn, and bell peppers. Cook for 2 minutes.
Step 3
In a medium bowl combine rice, black beans, corn, bell peppers, and salsa. Set aside and keep warm.
Step 4
Heat oil in a large skillet over medium heat. Fry eggs to desired doneness and season with salt and pepper to taste. Keep warm.
Step 5
Divide rice mixture into 4 bowls and top with eggs. Serve with queso fresco and avocado slices. Serve with tortilla chips.
