
16 Minute Spring Rice Salad with Herbed Buttermilk Dressing
Step 1
Heat rice according to package directions. Cool.

In a bowl, whisk together the buttermilk, mayonnaise, lemon juice, kosher salt, mint and chives.

Combine cooled rice with spinach, snow peas, cucumber, and feta cheese.
